Mexican Chef – Expat Position

About the role

Join Accor’s vibrant hospitality team as a Mexican Chef on an expatriate assignment. You will work closely with the Sous Chef to deliver high‑quality Mexican cuisine across all meal services while upholding the brand’s standards of taste, presentation, and hygiene.

Key responsibilities

• Assist the Sous Chef in the full operation of every kitchen unit.
• Maintain cost control, quality, hygiene, taste and presentation of all food produced or purchased.
• Prepare and order food supplies, verify deliveries of meat, fish and vegetables.
• Manage inventory using FIFO principles and monitor storage conditions.
• Plan daily food production in line with the Executive Culinary Chef’s guidelines.
• Develop and standardise recipes to ensure consistent portions, flavor and quality.
• Ensure all kitchen staff follow personal hygiene rules and maintain proper grooming standards.
• Keep accurate records for the food‑safety system and complete required documentation.

Required profile

• Professional appearance complying with kitchen hygiene rules (short, well‑kept hair; no moustache or beard for men).
• Ability to work in a coordinated manner with section chefs and guide them as needed.
• Strong attention to detail in food presentation and quality.
• Capability to manage inventory, control waste and optimise use of excess food.
