Chef de Partie (Hot) – Staff Cafeteria

About the role

The Chef de Partie (Hot) will lead the hot section of the staff cafeteria at Portaluna, a Morgans Originals Hotel in Egypt. You will be responsible for preparing and cooking dishes to the restaurant’s standards while ensuring a smooth, safe, and efficient service.

Key responsibilities

• Prepare, cook, and assemble hot dishes according to menu specifications, maintaining consistency in portion size and presentation.
• Manage the hot station throughout service, ensuring all ingredients are pre‑prepared, stocked, and the workspace remains clean and safe.
• Monitor dish quality, taste, and plating to meet the restaurant’s standards.
• Supervise junior kitchen staff, providing guidance on cooking techniques, hygiene, and station organization.
• Enforce food safety and hygiene regulations, maintaining proper storage and handling of ingredients.
• Assist with inventory control, ordering, and FIFO rotation for the hot section.

Required profile

• Proven experience in a hot kitchen environment, preferably as a Chef de Partie.
• Ability to lead and train junior kitchen staff while maintaining high standards.
• Strong awareness of health, safety, and food‑handling regulations.
• Organised, detail‑oriented, and capable of working efficiently under pressure.
