Assistant Chief Steward – Food & Beverage Management

About the role

The Assistant Chief Steward supports the daily management of kitchen utility operations and staff at a Marriott hotel in Cairo. The role covers dish room operations, night cleaning, back‑dock cleaning, banquet plating and food running, while continuously seeking to improve guest and employee satisfaction within the operating budget.

Key responsibilities

• Assist in managing day‑to‑day kitchen utility operations and staff scheduling.
• Oversee dish room, night cleaning, back‑dock cleaning and maintenance activities.
• Coordinate banquet plating and food running services.
• Verify that workers have the necessary supplies, equipment, tools and uniforms.
• Monitor material inflow, conduct inventories of china, glass, silver, food, equipment and liquor, and report shortages.
• Inspect supplies, equipment and work areas for efficiency and compliance with standards.
• Enforce proper cleaning routines for serviceware, equipment, floors and dish‑room machinery.
• Ensure compliance with food handling, sanitation standards and all applicable laws and regulations.
• Investigate employee accidents and follow loss‑prevention policies.

Required profile

• High school diploma or GED with at least 3 years of experience in procurement, food & beverage, culinary or a related area, OR a 2‑year degree in Hotel & Restaurant Management, Hospitality, Business Administration or a related field with at least 1 year of relevant experience.
• Minimum of 12 months of experience in a kitchen or stewarding environment.
