Chef de Partie – Hot Station

About the role

We are looking for a motivated Chef de Partie to lead our hot station at Portaluna, a Morgans Originals hotel in Egypt. You will be responsible for preparing and cooking dishes to the highest standards, ensuring consistency, speed, and quality throughout service.

Key responsibilities

• Prepare, cook, and assemble hot dishes according to menu specifications, maintaining portion control and presentation standards.
• Manage the hot station efficiently, ensuring all ingredients are pre‑prepared and the workspace remains clean, organized, and safe.
• Monitor food quality, taste, and appearance, making adjustments as needed to meet restaurant standards.
• Supervise junior kitchen staff, providing guidance on cooking techniques, hygiene practices, and station organization.
• Enforce food safety and hygiene regulations, maintaining proper storage, handling, and sanitation procedures.
• Assist with inventory control, ordering, storing, and rotating stock using FIFO principles.

Required profile

• Proven experience as a Chef de Partie working on a hot line.
• Ability to lead and train junior kitchen staff.
• Strong knowledge of food safety, hygiene standards, and kitchen sanitation.
• Excellent time‑management skills and the ability to work under pressure during service.
