Cost Controller – Hotel Finance & Operations

About the role

The Cost Controller will oversee and manage all cost aspects of food, beverage, operating supplies and related hotel expenses, ensuring accurate inventory records, purchasing compliance and profitability in line with Hilton’s financial standards.

Key responsibilities

• Monitor and analyse food & beverage, operating supplies and departmental costs, producing daily, weekly and monthly cost reports.
• Identify cost‑saving opportunities, recommend corrective actions and support pricing strategies.
• Oversee inventory control for food, beverage, engineering stores, housekeeping supplies and equipment, ensuring accurate stock receipts, issues and adjustments.
• Conduct regular inventory counts, supervise monthly stock takes and investigate variances.
• Verify that all purchases comply with Hilton procurement policies, review purchase orders, receiving reports and supplier invoices.
• Maintain accurate recipe costing, menu engineering reports and monitor standard yields, portion controls and production costs.
• Prepare monthly cost of sales reports, reconcile inventory balances with the General Ledger and support month‑end closing activities.
• Ensure compliance with Hilton finance policies, maintain strong internal controls and participate in internal and external audits.
• Collaborate closely with Finance, Procurement, F&B, Culinary and Receiving teams to safeguard assets and improve profitability.

Required profile

• Proven experience in monitoring and analysing food & beverage or hospitality costs.
• Strong understanding of inventory management procedures and stock valuation.
• Familiarity with procurement policies, purchase order verification and supplier invoice review.
• Ability to prepare detailed cost reports, variance analyses and support month‑end financial closing.
• Analytical mindset with a focus on identifying cost‑saving opportunities and improving gross profit margins.
• Excellent collaboration skills to work with cross‑functional teams such as Finance, Culinary and Procurement.
