Sous Chef

About the role

Portaluna, the first Morgans Originals hotel in Egypt, is seeking a Sous Chef to join its culinary team. Reporting to the Executive Chef, you will help deliver the brand’s vibrant and high‑quality dining experience while supporting day‑to‑day kitchen operations.

Key responsibilities

• Supervise daily kitchen activities, ensuring food preparation, presentation, and quality meet brand standards.
• Mentor and lead the kitchen team, fostering effective communication and teamwork.
• Assist with inventory management and ordering to maintain appropriate stock levels.
• Prepare, cook, and present dishes according to menu specifications and established recipes.
• Collaborate with the Executive Chef on menu and recipe development, testing new dishes and providing feedback.
• Train, schedule, and oversee kitchen staff to ensure efficient coverage during shifts.
• Maintain strict food safety and sanitation practices, monitoring storage, handling, and preparation.
• Control quality of all dishes, addressing any issues promptly.
• Support the Executive Chef with administrative tasks such as budgeting, evaluations, and inventory control.
• Step in for the Executive Chef when required, taking charge of kitchen operations.
