About the role

Portaluna, the first Morgans Originals hotel in Egypt, is seeking a dynamic Chef de Cuisine to lead its culinary team. You will be responsible for delivering high‑quality food experiences that reflect the brand’s vibrant and innovative spirit.

Key responsibilities

• Lead and manage the kitchen team, including chefs, cooks, and support staff.
• Supervise daily kitchen operations to ensure smooth service and consistent food quality.
• Design, develop, and update menus using seasonal ingredients while maintaining the restaurant’s culinary concept.
• Hire, train, mentor, and schedule kitchen associates to ensure optimal coverage.
• Oversee inventory management, supplier relationships, and food cost control.
• Conduct regular quality checks and address any food‑related concerns.
• Ensure compliance with local health, safety, and sanitation regulations.

Required profile

• Proven experience leading a kitchen team in a hotel or upscale restaurant environment.
• Strong understanding of menu development, food costing, and inventory control.
• Commitment to high standards of food quality, safety, and cleanliness.
• Ability to train, motivate, and evaluate staff performance.
