Chef de Partie (Hot) – Staff Cafeteria

About the role

We are looking for a motivated Chef de Partie (Hot) to lead the hot‑line section of our staff cafeteria at Portaluna, the first Morgans Originals hotel in Egypt. You will be responsible for preparing and cooking dishes to the highest standards while ensuring smooth operation of your station during service.

Key responsibilities

• Prepare, cook and assemble hot dishes according to menu specifications, maintaining consistency in taste, portion size and presentation.
• Manage the hot‑line station: ensure all ingredients are pre‑prepared, maintain a clean and safe workspace, and monitor equipment usage throughout service.
• Control quality by regularly checking food taste, appearance and seasoning, and oversee plating to meet restaurant standards.
• Supervise junior kitchen staff (e.g., Commis Chefs), provide training, and ensure adherence to hygiene and safety procedures.
• Maintain food safety and hygiene compliance, including proper storage, handling and sanitation of tools and equipment.
• Assist with inventory management for the station, applying FIFO principles and tracking stock levels.

Required profile

• Proven experience working on a hot line in a hotel or restaurant environment.
• Ability to lead and mentor junior kitchen staff.
• Strong knowledge of food safety, hygiene regulations and safe kitchen practices.
• Organised, detail‑oriented and able to work efficiently under pressure.
