About the role
Join Portaluna, a Morgans Originals Hotel, as a Chef de Partie (Hot) in the staff cafeteria. You will be responsible for preparing and cooking hot dishes, ensuring high quality and consistency while supporting the overall kitchen operation.
Key responsibilities
- Prepare, cook, and assemble hot menu items according to recipes and standards.
- Manage your designated kitchen station, ensuring all ingredients are pre‑prepared and the area remains clean and safe.
- Monitor portion sizes, plating, and presentation to meet restaurant guidelines.
- Supervise and mentor junior kitchen staff, providing guidance on techniques and hygiene.
- Maintain compliance with food safety, hygiene, and health‑and‑safety regulations.
- Assist with inventory control, ordering, storing, and rotating stock using FIFO principles.
Required profile
- Proven experience in a hot kitchen environment, preferably as a Chef de Partie.
- Ability to lead and train junior team members.
- Strong attention to detail and commitment to food quality.
- Understanding of health, safety, and food‑safety standards.
- Organised and capable of managing station workflow during service.
