Chef De Partie (Hot) – Staff Cafeteria

About the role

We are looking for a motivated Chef de Partie (Hot) to lead the hot‑section of our staff cafeteria at Portaluna, the first Morgans Originals hotel in Egypt. You will be responsible for preparing, cooking and presenting dishes that meet our high quality standards while ensuring a smooth and safe kitchen operation.

Key responsibilities

• Prepare and cook menu items for the hot section, maintaining consistency in taste, portion size and presentation.
• Manage the station before and during service, ensuring all ingredients are pre‑prepared, equipment is functional and the area remains clean and organized.
• Control quality by checking food taste, appearance and seasoning, and oversee plating according to restaurant guidelines.
• Supervise junior kitchen staff, provide training on cooking techniques and hygiene, and report any issues to the Sous Chef or Head Chef.
• Ensure compliance with food safety and hygiene regulations, maintain proper storage, and follow health‑and‑safety protocols.
• Assist with inventory management, including ordering, storing and rotating stock using FIFO principles.

Required profile

• Proven experience working as a Chef de Partie or in a similar hot‑section role.
• Ability to lead and mentor junior kitchen staff.
• Strong knowledge of food safety, hygiene standards and health‑and‑safety procedures.
• Organised approach to station and inventory management.
