Chef De Partie (Hot) – Staff Cafeteria

About the role

The Chef De Partie (Hot) will lead the hot section of the staff cafeteria at Portaluna, the first Morgans Originals hotel in Egypt. You will be responsible for preparing and cooking menu items to the brand’s quality standards while ensuring a smooth, safe, and efficient kitchen operation.

Key responsibilities

• Prepare, cook, and assemble dishes for the hot station, maintaining portion control and presentation standards.
• Manage the hot section throughout service, ensuring all ingredients are pre‑prepared and the workstation remains clean and organized.
• Monitor food quality, taste, and plating to guarantee consistency with restaurant guidelines.
• Supervise and mentor junior kitchen staff, such as Commis Chefs, reinforcing proper cooking techniques and hygiene practices.
• Enforce food safety and hygiene regulations, maintaining proper storage, sanitation, and safe handling procedures.
• Assist with inventory control for the hot section, including ordering, storing, and rotating stock using FIFO principles.

Required profile

• Proven experience working as a Chef de Partie or similar role in a hot kitchen environment.
• Ability to lead a station, coordinate with the kitchen team, and handle high‑pressure service periods.
• Strong understanding of food safety, hygiene standards, and proper storage practices.
• Willingness to train and support junior kitchen staff.
