Chief Steward – Luxury Hotel

About the role

The Chief Steward leads the entire stewarding operation for a large‑scale, multi‑outlet food & beverage environment within a prestigious hotel. This hands‑on leader ensures impeccable hygiene, efficient equipment management and strict cost control while supporting the overall guest experience.

Key responsibilities

• Lead and manage the stewarding team across kitchens, restaurants, banquets and back‑of‑house areas.
• Guarantee a continuous supply of clean, safe and well‑maintained equipment for all F&B operations.
• Oversee night cleaning, deep‑cleaning schedules, waste management and overall back‑of‑house organisation.
• Enforce compliance with Vietnam food safety laws, HACCP and hotel hygiene standards; coordinate audits with the Executive Chef and F&B leadership.
• Control stewarding payroll, breakages, chemical consumption and other operating expenses.
• Manage inventories, par stocks and the lifecycle of equipment and supplies.

Required profile

• 3‑5 years of senior stewarding experience in a luxury hotel or resort.
• In‑depth knowledge of advanced cleaning procedures, chemical handling and industrial dishwashing systems.
• Strong understanding of HACCP, food safety, hygiene and sanitation standards.
• Solid financial acumen for cost and inventory control.
• Proven leadership with a visible, hands‑on presence on the floor.
• Fluent English and willingness to work flexible shifts, including evenings, weekends and public holidays.
• Excellent organisational, problem‑solving and communication skills in a multicultural environment.
