About the role
The Sous Chef will lead daily kitchen operations at Portaluna, the first Morgans Originals hotel in Egypt. Reporting to the Executive Chef, you will ensure high‑quality food preparation, maintain consistency, and uphold the brand’s culinary standards.
Key responsibilities
- Supervise all kitchen activities, including food preparation, cooking, and plating.
- Mentor and train kitchen staff, fostering teamwork and effective communication.
- Assist with inventory control, ordering supplies, and maintaining optimal stock levels.
- Collaborate with the Executive Chef on menu and recipe development, testing new dishes and adjusting recipes as needed.
- Ensure compliance with food safety, sanitation, and health regulations.
- Monitor dish quality, address any issues promptly, and maintain consistency across service.
- Support the Executive Chef with administrative tasks such as budgeting, associate evaluations, and scheduling.
Required profile
- Proven experience supervising kitchen teams in a hotel or upscale restaurant environment.
- Strong knowledge of food safety and sanitation standards.
- Ability to manage inventory, control costs, and assist with budgeting.
- Excellent communication skills and a service‑focused mindset aligned with the Heartist culture.
