Pastry Sous Chef

About the role

Four Seasons Resort at Sharm El Sheikh is looking for a Pastry Sous Chef, a management position within the Pastry kitchen department reporting to the Executive Pastry Chef. The role plans, organizes, controls and directs the work of pastry kitchen staff so that food is prepared to a high standard with consistent quality.

Key responsibilities

• Select, train, evaluate, lead, motivate, coach and discipline pastry kitchen staff to meet cultural and core standards.
• Assist in planning and developing recipes and ensure consistent preparation and presentation of all food items.
• Control labour and operating costs through scheduling, budgeting, purchasing decisions and inventory control.
• Ensure compliance with sanitation standards and keep the kitchen clean and organized.
• Maintain quality and portion control systems, monitor food shipments against purchasing specifications and promote food quality awareness.
• Communicate with employees and managers, attend operational meetings and coordinate with other departments.
• Follow Four Seasons' work rules and standards of conduct.

Required profile

• College degree, preferably in hotel/restaurant management or culinary arts, or equivalent experience.
• Three to five years in a culinary or food and beverage line position, or one to two years in a supervisory or assistant manager role.
• Ability to read, write and speak English.

Required skills

• Working knowledge of division operations and Four Seasons' standards, policies and standard operating procedures.
• Ability to use computer equipment and food and beverage computer systems.
• Ability to operate culinary production equipment and tools.
