About the role
Portaluna, a Morgans Originals Hotel, is launching its first property in Egypt and seeks a dynamic Chef de Cuisine to lead the kitchen team. You will be responsible for delivering high‑quality, innovative dishes while ensuring smooth daily operations and a safe, efficient work environment.
Key responsibilities
- Lead and manage the kitchen team, including chefs, cooks, and support staff.
- Supervise daily kitchen operations to maintain service flow and food quality.
- Develop, update, and standardise menus using seasonal ingredients.
- Hire, train, mentor, and schedule kitchen personnel.
- Oversee inventory management, supplier relations, and cost control.
- Conduct quality checks on preparation, cooking, and plating.
- Ensure compliance with local health, safety, and sanitation regulations.
Required profile
- Strong leadership and decision‑making abilities.
- Positive, service‑focused attitude aligned with the company’s Heartist culture.
- Experience in building and empowering diverse kitchen teams.
