About the role
We are looking for a motivated Chef de Partie to lead the hot section of our kitchen at Portaluna, the first Morgans Originals hotel in Egypt. You will be responsible for preparing and cooking dishes to the highest standards while ensuring smooth operation of your station.
Key responsibilities
- Prepare, cook and assemble menu items for the hot section, maintaining consistency in taste, portion size and presentation.
- Manage the station before and during service, ensuring all ingredients are pre‑prepared, equipment is functional and the workspace remains clean and safe.
- Monitor quality control, checking seasoning, plating and overall dish appearance against restaurant standards.
- Supervise and mentor junior kitchen staff, providing guidance on techniques, hygiene and efficient workflow.
- Ensure compliance with food safety and health regulations, maintaining proper storage, sanitation and safe handling practices.
- Assist with inventory and stock control, ordering, storing and rotating supplies using FIFO principles.
Required profile
- Proven experience as a Chef de Partie or similar role in a hot kitchen environment.
- Ability to lead and train junior chefs while maintaining high standards of hygiene and safety.
- Strong knowledge of food safety regulations and inventory management practices.
Required skills
- Food preparation and cooking techniques for hot dishes.
- Plating and presentation skills.
