Chef De Partie (Hot)

About the role

Join Portaluna, the first Morgans Originals hotel in Egypt, as a Chef De Partie (Hot). You will lead the hot section of the kitchen, ensuring every dish meets the brand’s high standards of taste, presentation, and consistency.

Key responsibilities

• Prepare and cook menu items for the hot section, maintaining portion control and visual standards.
• Manage the station efficiently, ensuring all ingredients are pre‑prepared and the workspace remains clean and safe.
• Monitor dish quality, adjusting seasoning and presentation as needed.
• Supervise junior kitchen staff, providing guidance on cooking techniques and hygiene practices.
• Ensure compliance with food safety and hygiene regulations throughout service.
• Assist with inventory control, ordering, storing, and rotating stock using FIFO principles.

Required profile

• Proven experience in a hot kitchen environment, preferably as a Chef De Partie or similar role.
• Ability to lead and mentor junior kitchen staff.
• Strong understanding of food safety, hygiene standards, and health‑safety protocols.
• Organised, with the capacity to manage a busy station during peak service.
