Executive Sous Chef Buffet - Hot

About the role

Movenpick Cairo Media City in Giza, Egypt is looking for an experienced Executive Sous Chef Buffet - Hot to lead its hot food and buffet operations. The role works closely with the Executive Chef and kitchen staff to deliver high-quality, safe and consistent food in a fast-paced hospitality setting.

Key responsibilities

• Oversee and manage hot food preparation, cooking and plating, following recipes, portion sizes and presentation standards
• Lead, train and supervise kitchen staff on techniques, food safety and performance expectations
• Maintain food safety and hygiene standards, including HACCP protocols
• Monitor food quality, temperature control and inventory to reduce waste
• Plan and coordinate hot buffet menus with the Executive Chef, considering seasonality and guest preferences
• Maintain kitchen equipment and troubleshoot operational issues
• Run quality control checks and coordinate with front-of-house staff for smooth service
• Keep detailed records of food costs, inventory and kitchen operations

Required profile

• Minimum 5 years of kitchen experience in a high-volume hospitality setting
• Minimum 2 years as a sous chef or in a senior supervisory culinary role
• Leadership and team management skills; able to work flexible hours including evenings, weekends and holidays
• Physical ability to stand for long periods in a hot kitchen

Required skills

• HACCP certification and strong knowledge of food safety and sanitation
• Hot food preparation, cooking techniques and buffet service management
• Inventory management and food cost control
• Familiarity with kitchen management systems and POS systems (preferred)
