Lab Microbiologist

About the role

Lesaffre Egypt for Yeast Industries, a joint-stock company producing baking yeasts and yeast extracts, is hiring a Lab Microbiologist in Nubariyah, Egypt. The role reports to the Lab Section Head and covers routine microbiological analysis, media preparation, environmental monitoring and equipment calibration within the quality assurance laboratory.

Key responsibilities

• Comply with safety requirements in the lab through BBS, near-miss identification and LSE policy, and apply lean tools such as 5S, VPM, RCA and Kaizen.
• Perform daily microbiological analysis of in-process samples and finished product to monitor food safety.
• Prepare media, ensure sterilization and compliance for the hygienic indicator lab.
• Prepare the seed culture facility so it stays aligned with the fermentation plan.
• Follow up on calibration and validation of laboratory equipment and check personnel and machine parts against the environmental control plan.
• Apply controls through air sampling and swabbing, and assist with new challenges requiring microbiological analysis.
• Detect and identify pathogenic bacteria, perform microbial counts, handle data release and inject seed cultures.

Required profile

• Bachelor's degree in Microbiology, Chemistry, Biochemistry or IMAC.
• 0-2 years of hands-on microbiological laboratory operations; food industry experience preferred.
• Commitment to laboratory safety and behavior-based safety practices.

Required skills

• Advanced food microbiology testing, including culture preparation and analysis.
• Working knowledge of GMP, GLP and HACCP standards.
• Environmental sampling, swabbing and pathogen detection.
• Equipment calibration, validation and maintenance.
• Seed culture preparation and fermentation process understanding.
• Data management, microbial counting and laboratory documentation.
