Quality & Hygiene Officer

About the role

The Quality & Hygiene Officer will ensure the highest standards of food safety and hygiene across all hotel operations. Working closely with process owners, the officer will develop training, monitor compliance, and act as the primary contact for food safety audits and guest concerns.

Key responsibilities

• Identify training needs for the Food Safety System and deliver relevant training sessions.
• Support process owners in preparing required documents and quality records.
• Lead periodic control, monitoring and validation activities according to established plans.
• Monitor food safety at critical points such as receiving, transportation, storage, preparation areas and buffets.
• Conduct routine checks on cleaning, personal hygiene and personnel practices.
• Collect samples of food, water, surfaces and personnel hands for microbiological and other laboratory analyses and interpret results.
• Perform swab tests on surfaces and hands, and take representative kitchen samples.
• Ensure compliance with legal regulations and food safety standards.
• Identify and report non‑conforming products, manage emergency situations, recalls and corrective actions.
• Handle guest complaints related to food safety and coordinate with auditors during external audits.

Required profile

• Proven experience in food safety, hygiene or quality assurance within the hospitality sector.
• Strong knowledge of food safety regulations and standards.
• Ability to lead training, audits and emergency response actions.
• Excellent analytical skills for interpreting microbiological results.
