About the role

Portaluna, a Morgans Originals Hotel, is launching its first property in Egypt and seeks a dynamic Chef de Cuisine to lead the kitchen team. You will be responsible for delivering high‑quality, innovative dishes while ensuring smooth daily operations and a safe, efficient work environment.

Key responsibilities

• Lead and manage the kitchen team, including chefs, cooks, and support staff.
• Supervise daily kitchen operations to maintain service flow and food quality.
• Develop, update, and standardise menus using seasonal ingredients.
• Hire, train, mentor, and schedule kitchen personnel.
• Oversee inventory management, supplier relations, and cost control.
• Conduct quality checks on preparation, cooking, and plating.
• Ensure compliance with local health, safety, and sanitation regulations.
