About the role

The Chef De Partie – Baker leads the daily operations of the shipboard bakery, ensuring high‑quality bread production, compliance with food‑safety standards, and seamless service to guests and crew. Working closely with the Head Baker, you will manage a multicultural team in a fast‑paced hospitality environment.

Key responsibilities

  • Oversee smooth daily bakery operations and control production according to company policies.
  • Coach, supervise and evaluate bakery staff together with the Head Baker.
  • Produce, present and maintain the quality of the bread assortment for daily menus.
  • Prepare production forecasts, record leftovers and manage inventory to minimise waste and keep food costs within budget.
  • Set up bread displays across buffets and ensure compliance with United States Public Health (USPH) regulations.
  • Maintain bakery cleanliness, equipment care and readiness for USPH inspections.
  • Handle requisition, transport of supplies from main stores and ensure accurate recipe yields.
  • Complete daily consumption recaps and monitor staff punctuality, uniform standards and hygiene.
  • Participate in meetings, training and other work‑related activities as required.

Required profile

  • Minimum two years’ experience as a Chef De Partie – Baker in an upscale hotel, resort, cruise ship or convention banqueting service (shipboard experience preferred).
  • Culinary school degree.
  • Strong management, communication, problem‑solving and decision‑making abilities in a multicultural setting.
  • Excellent customer‑service orientation, team‑building and conflict‑resolution skills.
  • Familiarity with personalised service principles and guest‑satisfaction evaluation techniques.

  • Bakery production and bread‑making techniques.
  • Food safety knowledge, specifically United States Public Health (USPH) rules.
  • Inventory management and supply requisition.
  • Recipe costing, yield calculation and menu planning.
  • Time‑and‑attendance procedures and documentation.
