About the role
The ship’s galley is seeking an experienced butcher to join the culinary team. You will be responsible for preparing high‑quality meats and poultry for guests and crew, ensuring compliance with health standards and shipboard procedures.
Key responsibilities
- Thaw, cut, and prepare meats and poultry according to the schedule set by the Culinary team.
- Rotate stock using FIFO (first‑in, first‑out) methodology.
- Clean and sanitize work areas and utensils in line with United States Public Health (USPH) regulations.
- Assist with transporting food items within the galley and store received products in freezers on loading days.
- Maintain readiness for USPH inspections and attend all required meetings and training sessions.
- Perform any additional duties assigned by the Head Butcher or Executive Chef.
Required profile
- Minimum three years of butchering experience in an upscale hotel, resort, cruise ship, or convention banqueting service.
- High school diploma or equivalent.
- Familiarity with shipboard operations and the ability to assist guests and crew with inquiries.
Required skills
- Professional butchering and meat‑preparation techniques.
- FIFO stock management.
- Cleaning and sanitizing procedures compliant with USPH standards.
- Use of standard butchery equipment and tools.
