Restaurant Chef - Bullona, Department Head

About the role

Four Seasons Resort at Sharm El Sheikh is looking for a Restaurant Chef for the Bullona outlet, acting as department head of the kitchen. The role plans, organises, controls and directs the work of kitchen staff, ensuring superior quality and consistency in food preparation.

Key responsibilities

• Coordinate the selection, training, development and evaluation of kitchen employees and managers, and plan the outlet's operation strategically
• Assist in menu planning and development, and ensure consistent preparation and presentation of all food items
• Control labour and operating costs through scheduling, budgeting, purchasing decisions and inventory control
• Set up quality and portion-control systems, establish purchasing specifications and monitor operating criteria
• Communicate with staff and managers and attend regular operational meetings to coordinate with other departments

Required profile

• College degree preferably in hotel/restaurant management or culinary arts, or equivalent experience
• Three to five years of experience in multiple culinary and food & beverage department head positions, specialising in Mediterranean Italian cuisine
• Working knowledge of division operations
• Reading, writing and oral proficiency in English

Required skills

• Ability to operate computer equipment and food & beverage computer systems
• Ability to use culinary production equipment and tools
