Senior Sous Chef - Hot Kitchen

About the role

An experienced Senior Sous Chef - Hot is sought to join a hotel in 6th of October City, Egypt, which is part of the Accor network of more than 45 brands, 5,500 hotels and 10,000 restaurants. The role oversees all hot kitchen operations, working with the Executive Chef and kitchen staff to deliver consistent food quality and safety.

Key responsibilities

• Oversee and manage hot kitchen stations (sauces, proteins, plated dishes) and ensure recipe and presentation standards
• Supervise and mentor kitchen staff on techniques, food safety and performance
• Analyze and optimize workflows to improve efficiency and reduce food waste
• Prepare and execute complex hot dishes and help develop menus
• Monitor portion control, plating consistency and food quality
• Maintain inventory records, manage food costing and coordinate equipment maintenance
• Ensure compliance with HACCP and food safety regulations
• Train staff on equipment use, food handling and safety, and run quality control checks
• Organize mise en place for peak hours

Required profile

• Minimum 5 years in hot kitchen operations in a high-volume setting
• Minimum 2 years in a supervisory or sous chef role
• Previous hospitality experience; Egyptian nationality accepted
• Fluent English; Arabic is a plus
• Willingness to obtain current food safety certification; HACCP certification preferred
• Physical ability to stand for long periods in a hot kitchen
