Quality & Hygiene Officer

About the role

The Quality & Hygiene Officer ensures that all food and beverage operations meet the highest standards of safety and hygiene across Accor’s hotels and restaurants. Working closely with process owners, you will support training, monitor documentation, and lead regular inspections to protect guests and staff.

Key responsibilities

• Identify training needs for the Food Safety System and deliver training sessions.
• Assist process owners in preparing required documents and quality records.
• Monitor the effectiveness of Food Safety System documents and report findings.
• Lead periodic control, monitoring and validation activities in receiving, storage, preparation, and service areas.
• Conduct routine checks on cleaning, personal hygiene, and personnel practices.
• Collect and analyse samples of food, water, surfaces, and personnel hands for microbiological and other laboratory tests.
• Provide feedback on analysis results and ensure corrective actions are implemented.
• Ensure compliance with legal regulations and internal standards related to food safety.
• Handle non‑conforming products, emergencies, recalls and guest complaints related to food safety.

Required profile

• Experience in food safety, hygiene or quality assurance within hospitality or similar environments.
• Strong knowledge of food safety regulations and standards.
• Ability to conduct trainings and communicate effectively with staff.
• Attention to detail and capacity to act quickly in emergency situations.
