Assistant Pastry Chef

About the role

An Accor hotel in Taba is looking for an Assistant Pastry Chef to assist the Executive Chef and Executive Sous Chef in overseeing the kitchen and stewarding operations of the hotel. The role calls for a sincere, warm and enthusiastic approach to service, with a commitment to knowing guests and delivering service excellence.

Key responsibilities

• Plan and organize food production, purchasing and manpower based on forecasts and reports, and make requisitions for the next day
• Prioritize and organize daily tasks so that deliveries are made on time
• Coordinate purchasing for the kitchen and stewarding departments with the finance team according to hotel procedures
• Monitor food cost daily to meet monthly targets without compromising product quality
• Train and develop the kitchen and stewarding team in departmental operating standards
• Taste, season and present food to the required standard before serving
• Prepare fermented goods, baked products, cakes, pastries, puddings and desserts using classical and traditional Western techniques
• Ensure the team knows the a la carte housekeeping and handyman services and can upsell them
• Improve kitchen flow through productivity management and energy-saving programs
• Support staff in reaching financial, operational and service targets through training and clear policies
• Review schedules and annual leave plans, plan the weekly rota and manage working hours to protect productivity
• Assist the Executive Chef and Sous Chef in implementing the department's training plan
