Senior Sous Chef

About the role

Swissotel Sharm El Sheikh, part of the All-Inclusive Collection resort, is looking for a Senior Sous Chef for its kitchen. The role covers kitchen operations, food quality and cost control, and works closely with the Food & Beverage Manager.

Key responsibilities

• Monitor kitchen schedules, prepare meals on time for outlets and banquet activities, and ensure every dish meets portion and presentation standards.
• Review and correct staff uniforms and grooming, evaluate team performance and initiate promotions.
• Develop food promotions, introduce guest chefs when needed, and drive menu changes and menu preparation.
• Control food cost by reviewing store requisitions and direct purchases, monitor food par stocks and initiate expiry date spot checks.
• Drive extracurricular outlet events with the F&B Manager and handle guest complaints directly.
• Approve kitchen payroll documents before they go to accounts and attend department head meetings and monthly chef meetings.
• Maintain HACCP food safety standards, keep emergency exits clear, and follow environmental and safety policies.

Required profile

• At least a high school or vocational diploma.
• Extensive practical and managerial experience in the department (at least 5 years).
• Intermediate English and basic computer literacy.
• Prior attendance at courses and seminars in the field.

Required skills

• Excellent command of products and cooking techniques, with knowledge of local and international cuisine.
• Advanced knowledge of other kitchen sections and processes.
• Responsibility for business development.
