About the role
We are seeking a Chef de Partie (Hot) to join the kitchen team at Portaluna, the first Morgans Originals hotel in Egypt. The successful candidate will be responsible for preparing and cooking hot dishes to the restaurant’s high standards while overseeing a dedicated section of the kitchen.
Key responsibilities
- Prepare, cook, and assemble hot menu items, ensuring consistency in portion size, taste and presentation.
- Manage the hot station efficiently, keeping ingredients pre‑prepared, the workspace clean and equipment used safely.
- Monitor quality control by checking food taste, appearance and portioning throughout service.
- Supervise and mentor junior kitchen staff, guiding them on cooking techniques and hygiene practices.
- Ensure compliance with all food safety, hygiene and health‑safety regulations.
- Assist with inventory management, ordering, storing and rotating stock using FIFO principles.
Required profile
- Proven experience working in a hot kitchen, preferably as a Chef de Partie or equivalent.
- Ability to lead and train junior kitchen staff while maintaining high standards of cleanliness and safety.
- Strong organisational skills to keep the station well‑stocked and running smoothly during service.
