About the role
Join Portaluna, the first Morgans Originals hotel in Egypt, as a Chef de Partie responsible for the hot section of the kitchen. You will oversee food preparation, cooking, and plating while ensuring high standards of quality, safety, and efficiency.
Key responsibilities
- Prepare and cook dishes for the hot section according to menu specifications, maintaining consistency in taste, portion size, and presentation.
- Manage the hot station during service, ensuring all ingredients are pre‑prepped, equipment is functional, and the workspace remains clean and safe.
- Monitor food quality, portion control, and seasoning, adjusting recipes as needed to meet restaurant standards.
- Supervise and mentor junior kitchen staff, providing training on cooking techniques, hygiene practices, and station organization.
- Ensure compliance with food safety and hygiene regulations, including proper storage, handling, and sanitation of tools and equipment.
- Assist with inventory management for the hot section, ordering, storing, and rotating stock using FIFO principles.
Required profile
- Proven experience as a Chef de Partie in a hot kitchen environment.
- Ability to lead and train junior chefs while maintaining a safe, organized work area.
- Strong knowledge of food safety, hygiene standards, and inventory control.
