Production Manager

About the role

Americana Restaurants is seeking a Production Manager to lead end‑to‑end commissary operations across its facilities in the MENA region. You will be responsible for ensuring safe, efficient, and high‑quality food production while driving operational excellence and continuous improvement.

Key responsibilities

• Manage daily production operations and delivery across all commissary sites.
• Ensure production schedules are met safely and that product quality complies with company standards.
• Hire, train, and supervise commissary staff, fostering a high‑performance team culture.
• Implement and maintain quality control measures, food safety protocols, and OHSE compliance.
• Lead process‑improvement initiatives to optimise workflows, reduce waste, and enhance productivity.
• Develop, monitor, and control the facility budget, managing expenses and resource allocation.
• Maintain accurate production, quality, and safety records and present performance reports to senior management.
• Create contingency plans for emergencies or production disruptions.

Required profile

• University degree in mechanical engineering, food technology, process engineering, operations management or a related field.
• Minimum 7 years of experience in food production (preferably poultry, vegetable or salad production) with at least 3 years in a managerial role.
• Proven ability to manage budgets, production costing and quality‑control processes.
• Experience with GFSI or similar food‑safety audit standards is an advantage.
• Strong problem‑solving, analytical and communication skills.
